Reference articles describe equipment, ingredients and food categories at a general level. Where home curing of meat is discussed, the descriptions reflect general practice; individual cures involve food-safety variables (cure ratios, temperature, humidity, time) that are the responsibility of the practitioner. Do not undertake home curing without consulting a thorough reference such as Ruhlman & Polcyn's Salumi and a published cure-ratio chart.
