Bresaola della Valtellina IGP, Sliced 3 oz
Sliced bresaola from Valtellina, the alpine valley in northern Lombardy, with the IGP designation. Bresaola is air-dried beef (eye-of-round or top-side), cured with salt, black pepper and aromatic herbs, then aged 4–8 weeks in the dry cold air of the valley. The result is a deep red, lean, lightly fragrant cured meat with the lowest fat content of the major Italian salumi.

Serve at room temperature, sliced paper-thin, drizzled with olive oil and lemon juice and topped with rocket and shaved Parmigiano — the canonical bresaola carpaccio.
