Each wheel is stamped with its province, dairy, production month, and year.
About this product
At 24 months the cheese has developed the granular crystalline texture (tyrosine crystals) characteristic of long-aged Parmigiano, with hazelnut and dried-fruit notes. Serves at room temperature in chunks broken with the almond-shaped Parmigiano knife; grates over pasta. Rind is edible and traditionally added to broth.
