The DOP designation restricts production to the hills around Parma and to two ingredients only: pork from Italian-born heritage-breed pigs, and sea salt. No nitrites, no nitrates, no smoke. Each leg is branded with a five-pointed crown when it passes the 12-month consortium inspection.
About this product
At 18 months the prosciutto has developed the sweetness characteristic of long-aged Parma — the result of slow proteolysis in the muscle. Slice thin (the 4 oz pre-sliced pack is machine-cut) and serve at room temperature with grissini, melon or buttered bread.
