Agostino Recca Salt-Packed Anchovies, 800 g Tin

Salt-packed anchovies from Agostino Recca, a Sciacca processor in southern Sicily. Anchovies are caught in spring in the Sicilian Channel, salted whole within hours of landing and aged in salt for 6–12 months. The 800 g tin contains 35–50 fish depending on grade, layered head-to-tail in coarse sea salt.

About this product

Salt-packed anchovies need rinsing and filleting before use: rinse under cold water, slide a finger along the spine to lift the fillets free, and pat dry. The result is firmer, meatier and saltier than oil-packed anchovies sold in jars. Refrigerate after opening; cover the surface with salt or olive oil to prevent the remaining fish from drying out.
