Rustichella d'Abruzzo Bronze-Cut Spaghetti, 500 g
Bronze-cut spaghetti from Rustichella d'Abruzzo, a small Pianella pasta maker founded in 1924. Made from durum-wheat semolina from the Abruzzo region, kneaded slowly, extruded through bronze dies and air-dried at low temperature for 40–60 hours. The bronze die produces a rough surface texture that holds sauce; the long slow drying preserves protein structure and gives the cooked pasta firmer bite than industrially produced equivalents.

Cook time is roughly 9–10 minutes for al dente. Serves four. Stores indefinitely in cool dry conditions if the pack is unopened.
